Ingredients

150g Soft Brown Sugar
100g Caster Sugar
3 Large Eggs
175ml Milk
15g Butter
2 tablespoon Horlicks
175g Plain Flour
25g Cocoa Powder
1 teaspoon Baking Powder
½teaspoon Baking Soda
For the icing and decoration:
220g Icing Sugar
1 ½ teaspoon Cocoa Powder
50g Horlicks
130g Unsalted Butter
2 tablespoon Boiling water
2 x 37g Maltesers

If you’re looking for an alternative to traditional chocolate cake then this wonderfully indulgent Chocolate Malteser Cake is your perfect solution.

Flavoured with malt extract and topped with maltesers which accent the flavour of the cake. This is a wonderful accompaniment to a cup of tea or coffee in from the the TV with a movie or when you have friends around.

Pre heat the oven to 170°C (150°C Fan)
Butter and line two 20cm loose-bottomed cake tins with baking pepper.

Whisk together the sugars and eggs until light and frothy.
Heat milk, butter and Horlicks powder in saucepan until the butter melts - DO NOT BOIL.
Mix in the hot Horlicks mixture into the egg and sugar, then fold in the flour, cocoa, baking powder and bicarb.

Divide the cake batter evenly between the two prepared tins and bake in the pre heated oven for 25 minutes.
Let the cakes cool in cooling rack for about 10 minutes then turn out of the tin.

While the cakes are cooking prepare the topping.
In food processor put the icing sugar, cocoa and Horlicks. Blitz to remove all lumps. Add the butter and blitz again. Stop, scrap down and repeat.
Start the processor and pour the boiling water down the funnel and stop the food processor when you have a smooth buttercream.

When the cakes are cool, sandwich together with half of the buttercream. Ice the top with what is left. Stud the outside edge, with a ring of Maltesers spaced about 1cm part or use them to decorate the top in whichever funky way pleases you.
