Prepare Your ChickenJoint your chicken into 8 pieces (or you could also use just chicken legs. 1 per person) |

Prepare You Curry PasteI use a mortar and pestle to make smooth paste but you can also use food processor. If you do, add 1 tablespoon of oil to make it smoother and fast the process. Fry the chicken for 2 minutes each side. don’t worry, we’ll continue cook it with the paste. |

Heat 2 tablespoon oil in saucepan over medium heat. Add the paste and cook until fragrant. Add bruised lemon grass, galangal, bay leaves, kafir lime leaves, tomatoes and sweet soy sauce. |

Add the chicken, sugar, chicken powder and ½ litre of water and cook over low heat until the liquid has absorbed. Taste and see if you need to season it. Serve it with yellow rice or Thai jasmine rice. |
