1 Cut in large chuck Red Pepper

1 Cut in large chuck Yellow Pepper

2 cut into wedges Red Onion

4 cloves minced Garlic

200g Canned Chopped Tomato

100ml Chicken Stock

2tsp Pimenton

Sea Salt

Pre heat oven 200C |

Season chicken well with salt and pepper and fry in a little oil until brown. Remove from pan and place in casserole dish. |

Fry mix pepper and onion over medium heat for 5 minutes, adding a little wine or water if necessary. Add garlic and pimento and fry for a further 2 minutes |

Add remaining ingredients, season and combine. Stir in tomatoes and stock and pour over chicken. |

Cook in pre heated oven for 60 minutes until chicken is cooked. |
