Ingredients

8 Pieces Chicken Joints
1 Cut in large chuck Red Pepper
1 Cut in large chuck Yellow Pepper
2 cut into wedges Red Onion
4 cloves minced Garlic
200g Canned Chopped Tomato
100ml Chicken Stock
2tsp Pimenton
Sea Salt
Freshly Ground Black Pepper

Pre heat oven 200C

Season chicken well with salt and pepper and fry in a little oil until brown. Remove from pan and place in casserole dish.

Fry mix pepper and onion over medium heat for 5 minutes, adding a little wine or water if necessary. Add garlic and pimento and fry for a further 2 minutes

Add remaining ingredients, season and combine. Stir in tomatoes and stock and pour over chicken.

Cook in pre heated oven for 60 minutes until chicken is cooked.
