1.5kg Maris Piper Potatoes

1 bulb Garlic

a splash Red Wine Vinegar

2tbsp Goose Fat

1 bunch of fresh Rosemary
Directions
When you go to a restaurant and order roast potatoes you always expect them to be crispy on the outside and fluffy on the inside. But we all know that doesn’t always happened. This is a recipe for perfect roast potato that insures that you are never disappointed with your homemade roast potatoes. These are the perfect complement for roast dinners however can be serve with steaks, duck and cherrie sauce or even fish. The choice is yours.

Pre heat oven to 190C |

Peel the potatoes, cut the same size and wash it in cold water to get rid of any extra starch then tip into larger pot. Cover with cold salted water and parboil for 7 minutes, then drain in a colander and leave to steam dry for 3 minutes. Give it a shake to help chuff up the potatoes. |

Tip the potatoes into a large tray in one layer and add the goose fat. Season well with salt and pepper. |

Toss the potato in the fat then roast for 30minutes or until lightly golden. |

Add 1 good lug of oil to a small bowl and tear in the herbs. Break up the garlic bulb. Adding the unpeeled cloves to the bowl along with a splash of red wine vinegar. |

Add the herbs mix to the potatoes and give the tray a good shake then pop in back to the oven for 30-35 minutes or until golden brown. |
